Is Your Recipe Safe?

March 31st, 2009

(NC)Sure, it tastes great and earns rave reviews from everyone sitting at the dinner table. But is your favourite recipe also a safe one? To prevent serving up foodborne illness at the dinner table, follow this helpful checklist when preparing a meal:

Marinating

I am marinating in a covered container in the refrigerator. Uncooked meat, poultry or fish in a marinade is perishable.

I am marinating meat for less than 24 hours.

I have disposed of leftover marinade to avoid cross-contaminating other foods.

Cooking Meat

I avoid cooking meat at low oven temperatures. Slow cooking at temperatures under 325F (163C) can create a bacteria-friendly environment.

I cook meat thoroughly. Consuming undercooked or raw poultry, fish or meat is risky, as harmful bacteria may be present.

I cook red meat to at least 160F (71C) and poultry to at least 180F (82C).

I use a meat thermometer. Look for products on the forefront of food safety, like Maple Leaf hams and turkeys with built-in meat thermometers. When the meat has been safely cooked, the thermometer will pop up to let you know it’s ready to eat.

By carefully preparing and cooking your food, you can minimize the risk of foodborne illness. Food processing companies, like Maple Leaf, recognize the importance of food safety. New York City’s Golden Gates

March 31st, 2009

The greatest city on earth has another reason to brag with the unveiling of the long-awaited public art project The Gates by artists Christo and Jeanne-Claude. Despite its popularity, some visitors feel the $21 million art installation is not art at all. Whether a work of art or spectacle, the orange flags strung like a ribbon throughout Central Park are sparking conversation and drawing in visitors by the subway load.

According to the Central Park Conservancy, which sells official Gates merchandise at the Park’s entrance on 59th Street, 10 to 20 million people are expected to visit the park during the 16 days that The Gates are on display.

“February is the slowest month for tourism in the city and the exhibit has already brought an unexpected number to the park, which is usually dead in the winter,” said Central Park Conservancy staff member, Chris Trimbull, 25. “I think it’s more popular than anyone had realized.”

Before The Gates opened, a mere 200,000 visitors were expected, however, the day after Mayor Michael Bloomberg unfurled the 1,089,882 square feet of streaming saffron fabric along 23 miles of park paths, attendance was already at 700,000 people.

Standing 16 feet high, The Gates are attracting the young, elderly, tourists and students alike, who took photographs, held hands, and observed the temporary display, despite temperatures falling below freezing.

New York’s AM news station 1010 WINS recently conducted an online web poll asking if The Gates are art or joke. Out of 1298 respondents, 65% said joke.

Lou Quillio is in agreement. With his sister and two daughters, he drove three hours from Saratoga, New York to see the golden gates. “It’s just a thing, it’s less the art and more the social aspect, it’s an attraction and a spectacle,” said Quillio.

His sister Susan, however, disagreed, saying, “It’s beautiful against all the gray rocks and bare trees.”

No matter what people thought, everyone visiting the park seemed to discuss the artistic merits of the project, even talking to strangers in a city of people who rarely make eye contact.

The communal experience, says Beth Fichtel who works in Manhattan, is better than the 7,500 steel structures wrapped throughout the park. “The energy in the air is contagious and it’s cool to be in something as enormous as Central Park and be surrounded by tons of people all talking about the same thing.”

While he jogged underneath the colorful billowing fabric, Manhattan resident Danny Schwartz asked, “I like it, but I don’t think it can be defined as art, but who’s to say really?”

Well, architectural student Amanda Herron, 22, reverently believes that Christo and Jeanne-Claude’s work is highly creative and refused to miss their recent endeavor, so she flew in from Alabama just for the event.

“Their art is inspiring, we study their installations in school and how they are able to change a space dramatically, then leave and change what people originally thought of the space,” said Herron. “It is so interesting, it comes and people soak it in, and then it’s gone.”

Herron further suspects that even after The Gates are removed, people will still be discussing them. For now her theory is true, The Gates are a big topic of conversation and debate at the office, in the news and around the world.

Music Business Success: Increasing Creativity

March 29th, 2009

As you ponder your goal and determine the best course to achieve it, you will need some creative ways of thinking and facing challenges that will arise. The most creative-thinkers out there will encourage you to think outside your box and to consider even the wildest of ideas.

One way to do this is to “Wild Mind Brainstorm.” Wild-Mind is done by having a piece of paper and writing down EVERY idea that occurs to you about the situation you’re facing. Do NOT evaluate your ideas–just write them down. Do NOT consider something ” too silly” or “too dumb” to write down–just write it down!

Evaluate your ideas in a few days, but not when you’re writing them down. Consider these ideas much like a newborn baby. You must cradle that baby and hold it lovingly and help it grow to a responsible adult. The same goes for your new ideas. You might find that one idea you would consider to be the “silliest” turns out to be your key for unlocking the door you’re facing.

Remember the guy who came up with the idea for Post-It Notes? The adhesive was discovered long before they found a use for it–and the person who said, “Let’s make some note pads that are small and can be easily removed,” was laughed at. But now–do you even see ONE office without Post-Its around? I have at least 6 pads of Post-Its in my desk drawer alone. There’s one in the kitchen, and one in the car.

Another way to increase your creativity is to be around others who are creative. Proverbs 27:17 says, “As iron sharpens iron, so people can improve each other.” If you hobnob with those who are known for creativity, it will wear off on you. And you will find new ways of looking at things and thinking about situations, as well.

You can find audio-books and speeches that will stir up your creative juices as well. Professional speakers and those who have “been there, done that” often hit the speaking-circuit and can pump fresh ideas and life in your goal and the ways you attain those goals.

I prefer removing myself from the goal-achieving mode and moving to a truly creative outlet–the arts. You may not consider yourself artsy or think you have any ability in this realm, but it’s worth taking a lump of clay (or Play-Doh) and working with it.

You may find, as I do, that when I’m working on a hobby that I truly love, I free up a portion of my brain that was engaged in my problem-solving. When that happens, I typically find a potential solution to my dilemma. Artistic creativity often sparks other forms of creative-thinking, as it engages a different area of the brain than what we’re used to using. Pick up a paintbrush, a pencil, arrange some flowers, or begin a needlework project. You may find in color and artistry you have a new lease on what you’re doing!

Movies - Watch What You Want, When You Want

March 28th, 2009

Movies are a tremendous source of entertainment for most people. The reason? It’s probably because even people who have little in common can find a movie to enjoy together.

The moviemakers apparently understood the need to create films that appeal to a wide audience. Otherwise, the good guy wouldn’t take time out in his pursuit of the bad guys to kiss the girl. The girl wouldn’t get herself in a wreck that required a heroic rescue before she got her guy. And - perhaps the most obvious example of all - the cartoons wouldn’t have such great humor that appeals to the adults almost as much as the children.

Technology has played an important role in broadening the appeal of most movies to encompass a wider audience. Consider the movies of a half-century ago. There were spacemen on Earth and earthlings in space, but the scenes were usually very plain and the almost everything was left to the imagination of the view. Today, the vistas are bigger than life, futuristic scenes are more incredible than the average imagination could have conjured on its own and the stunts are unbelievable - because they are humanly impossible.

But even when we’re watching a stunt that can’t possibly have happened in real life, we’re awed and amazed and can’t wait to see it again. And again. And that’s the beauty of the movie experience today. Not only are there thousands upon thousands of movies to watch, many are available to buy, rent or download onto your PC. You can watch them as often as you want, shelve them for awhile and watch them again.

While technology is playing an important role in the movie-making process, it’s also important for movie watching. The fact that many movies are now digital files on DVD allows moviemakers to apply a myriad of special features into the movie file itself. Surround sound is one of those special features and if you have a home theater set up with surround sound, you’ll be able to hear the special effects just like you do at a commercial theater. Ever wonder how it is that a door squeaks to your right, while a woman screams to your left? The answer is surround sound technology and a DVD has ample space to store those kinds of programming features.

You and your spouse will probably never agree on every single movie. But with the many movie titles available for you to rent or own either on DVD or to download to your computer, it’s likely that you’ll find something that you both want to watch tonight. And maybe even something that you both want to watch again. And again.

Video Conferencing: Choosing A Camera That Is Best For You

March 26th, 2009

When you think of video conferencing you probably picture a webcam perched on a computer or monitor recording your image and sending it out to the world. While webcams are most frequently used by online conference participants, it is also possible to get the work done with a digital video camera. Which webcam or digital video camera you opt for depends on your needs. Here are some points to consider when making your selection.

Webcams

Nowadays, web cams can be found for under $20 and go all the way up to $150. The difference between the high end cameras and the starter web cams are usually due to the quality of image that is put out.

First, take a look at the resolution of the camera. Ideally you should get a webcam that can produce at least a 640×480 resolution.

Then check how many frames per second the camera can handle. For video conferencing the ideal level is 30 frames per second (fps).

Finally, find out what kind of sensor the camera uses. The better web cams use CCD technology instead of CMOS. Also, remember that most webcams connect to computers with a USB cable.

Digital Video Cameras

For an even better result (sharper and faster images), you can use digital video cameras. These are the same devices that are used to record home movies, etc. Digital video cameras start as low as $250 and go up to thousands of dollars. In order to use a digital video camera, you need to make sure that the device supports a USB or a Firewire output and that it can be used as a webcam and connect you with online applications.

Whether you use a webcam or a digital video camera depends on the type of conferencing that you will be doing.

If you’re meeting in a manner in which the quality of the video is not too important, then a lower end webcam will probably suffice. However, if you need quality video, then a higher end webcam, or even a digital video camera will be required.

If you’ll be in a conference room setting, in which you need to get more than one person on camera, a digital video camera with tilt/pan/zoom capabilities will work best.

Firewire digital video cameras provide images that are so nice that you can see the second hand of a watch sweep by. You can also see details of products and items that normal webcams simply cannot provide. This is because firewire handles the processing of video much better than USB does, allowing for smoother images and better quality.

When you are out shopping for webcams, take a look at Logitech products. They are one of the leaders in this field and have a wide variety of models. They offer great products at reasonable prices. For digital video cameras, Canon offers a good selection and devices of excellent quality.

So, consider your needs and your budget and then find a webcam or a digital video camera that is best for you.

The Poker Dealer’s Take

March 18th, 2009

At live casino poker tables, the dealer manages the game. It is the dealer’s responsibility to make sure all the players pay the proper blinds or antes, and that the card deal progresses in proper order around the table at the casino.

Dealers are trained to be experts in poker. They must know all the rules, plus many obscure nuances that sometimes arise around the betting action. Because the dealer is the expert on the rules and protocols, if there are any disputes at the table, the dealer settles them.

If the players will not listen to the dealer, then a floor manager will be called. It is acceptable for a player to call for a floor manager when disputes arise, and dealers even appreciate this when a player becomes excessively irate. Unruly players will be ejected from the room if they don’t follow the dealer’s or floor manager’s instructions.

It is rude to make angry remarks about or insult a dealer because of losing a hand. The dealer pitches the card randomly and cannot control how they fall. All casinos and poker rooms have video surveillance in place to check on any cheating at the tables. That is why you will see dealers clap and twist their hands in the air when they arrive at or leave a table - to show that nothing is in their hands.

In live cash games, the dealer typically changes every 30 minutes. In tournament games, one dealer usually works a table until it is broken down.

Dealers, like other services personnel, making their living from tips, and winners are expected to contribute a percentage of their winnings to the dealers. In live cash games, it is customary to tip after winning a hand - usually the amount of the small blind or minimum bet. When a tournament ends, those who “finish in the money” are expected to tip about ten percent of their profit (prize money minus the entry fee).

The dealer role is a complex one - they must act as the table manager, accountant and mediator while keeping track of the cards, the action and people. Be courteous to and considerate of the dealers.

Miss Congeniality 2 Is Neither Armed Nor Fabulous

March 16th, 2009

Well, it’s not awful. And that is the best I can say for Miss Congeniality 2: Armed and Fabulous, the sequel to the surprise hit of 2000 Ms. Congeniality. Sandra Bullock reprises her role as Gracie Hart, the bumbling FBI agent who is skilled as an agent but woefully inept socially. Picking up three weeks after the last movie, Hart is somewhat forced into being the face of the FBI because she is no longer able to be an undercover agent due to her new found celebrity. With the help of a new stylist Hart is turned into a glamour girl who is more adept with a lip pencil then a fire arm. Problems arise when her friends from the first movie, Ms. United States (Heather Burns) and Stan Fields (William Shatner) are kidnapped and held for ransom.

The problem is that many of the hijinks and jokes in the film are ones we have seen time and time again. There are multiple costume changes: Bullock in her sassy “I’m the face of the FBI” outfits and a not so funny sequence in a drag club where Bullock and Regina King (Ray, Jerry McGuire) are pretending to be men, pretending to be women and forced to sing karaoke, are just a couple the movie has to offer. And how often have we seen the gay stylist, who of course is the only person who could possibly understand any of the women in the film. Can we say overused stereotype? Can we say so not funny? Can we say give me a break?

Speaking of King, who is a very talented actress, she does a horrible job playing the tough, attitude having, angry at the world FBI agent who is assigned to protect Hart as she goes to Vegas to try and save her friends. I mean if you’ve ever watched America’s Next Top Model or the Apprentice you’ve seen enough of the “black woman with an attitude” that it doesn’t need to play out on the big screen. Also their ebony and ivory routine is supposed to be funny and ultimately enlightening but instead comes across as hackneyed and another way to perpetuate long held stereotypes of blacks and whites.

The movie wasn’t all bad. There are some funny moments here and there thanks to Shatner who really should have had more lines. And the movie’s soundtrack is excellent. Whoever chose the music has a strong love for seventies funk and early eighties R&B. I was bobbing my head through the entire film and was happy to stay to see the credits roll because I was able to hear a favorite tune of mine that I hadn’t heard in awhile.

Ultimately the problem with sequels, particularly comedy sequels is that they either do one of two things: they try so hard to make a better movie then the original that they over reach and forget why the first movie was a success or they try so closely to emulate the first movie that the laughs they go for the second time around just seem too contrived and/or forced to be either original or funny. Miss Congeniality 2 falls prey to the latter. In an attempt to be as funny as the first film many of the gags and jokes are overused, overworked, unoriginal and just fall flat. Don’t bother going to the theatre to see Miss Congeniality 2. Just wait until it comes out on cable.

My Trip to Hawaii

March 15th, 2009

This post is from our recent trip to Honolulu. Ive got to tell you, if you ever have the opportunity to make it to Waikiki, you should definitely take the offer. It has to be one of the most lovely places in the U.S.. It is so amazing to have such a fantastic location in our nation.

The hospitality there is brilliant. We took a surfing lesson, rode a canoe, caught a few hula shows and even had a chance to try out some real Hawaiian food at a luau. They say ono out there, it means delicious. The Kalua Pig is to die for and be sure to stop by for a lava flow drink at Dukes. Its a little spot on Waikiki beach, great for an evening drink. One of the most memorable aspects was when we treated ourselves to the best Honolulu massage. It was awesome, super relaxing and well deserved after a hard years work.

Oahu is fantastic. Don’t stress that you won’t do it all, because you can’t. Figure out what is most important to you and focus on that. Take time to relax and savor just being there. Needless to say, we will be going back as soon as possible.
